What would the additional tax rows be for? And discount would be a percentage of the total? a whole negative dollar value?

Updating since it’s been a while. Currently Square Cash does not have an API that we can use to integrate. At this point we would need Square Cash to change in order for us to do the integration.

We aren’t planing to add support for custom categories in the near future. We’re considering better ways to allow people to sort expenses into categories other than the ones we’ve provided. In the meantime, if there are particular important categories you feel are missing, feel free to email us with a suggestion at support@splitwise.com.
I think there should be options to have a globally applied discount before/after tax as well as on a per item basis.
Applying globally works in a lot of cases, but I'd say that more than 50% of the time, I have to apply discounts and tax on a per item basis to cover the cases when my bill has both taxable and non-taxable items on it.
An example would be the Target Red Card in Michigan. We get 5% off globally, but we don't pay tax on food items in MI. If you're splitting the bill, the tax can be more complicated than evenly splitting it or distributing it based on percentages like Splitwise tends to do. Having additional fields next to each item would be really helpful.
